Chicken:
- 4 boneless skinless chicken breasts

Orzo Mixture:
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup uncooked orzo
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh baby spinach
- 1 tablespoon fresh basil, chopped (optional)
- Extra Parmesan for serving
Instructions
- Season the Chicken: Season chicken breasts with salt, pepper, garlic powder, and paprika.
- Sear the Chicken: Heat olive oil in a skillet, sear chicken until golden brown and cooked through. Set aside.
- Prepare Orzo Mixture: Melt butter in the skillet, sauté garlic, add orzo, sun-dried tomatoes, chicken broth, and cream. Simmer until orzo is tender.
- Finish the Dish: Stir in Parmesan and spinach. Return chicken to skillet, simmer to heat through. Garnish with basil and Parmesan. Serve hot.
Notes
- For added flavor, use sun-dried tomatoes packed in oil and add a little of the oil to the pan.
- You can substitute half-and-half for a lighter dish.
