- 3 cups chicken or vegetable broth
- 1 (14.5 oz) can diced tomatoes with juice
- 1 (9 oz) package refrigerated cheese tortellini
- 3 cups fresh spinach
- 1 cup heavy cream
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- ¼ teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
- ½ cup grated Parmesan cheese, for serving
Instructions
- Heat the olive oil: In a large pot over medium heat.
- Sauté onion and garlic: Cook until softened.
- Add broth and tomatoes: Bring to a boil.
- Cook tortellini: Follow package instructions.
- Stir in spinach and cream: Cook until wilted.
- Season and simmer: Add basil, oregano, red pepper flakes, salt, and pepper. Simmer until creamy.
- Serve: Ladle into bowls and top with Parmesan cheese.
