Creamy Sauce:
- 1 (8 oz) block cream cheese, cubed
- 1/2 cup sour cream
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon cumin (optional)
Additional:
- 1 cup shredded cheddar cheese
- Chopped fresh parsley or green onions (for garnish)
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C).
- Cook Pasta: Cook the pasta according to package directions until al dente, drain, and set aside.
- Prepare Meat Mixture: In a large skillet, heat olive oil over medium heat. Add ground beef and diced onion, cook until browned. Add garlic and cook for 1 minute. Drain excess fat if needed.
- Make Creamy Sauce: Stir in Rotel tomatoes, cream cheese, sour cream, chili powder, salt, pepper, and cumin. Cook until smooth.
- Combine and Bake: Mix in cooked pasta. Transfer to a baking dish. Top with cheddar cheese. Bake for 15–20 minutes until bubbly.
- Garnish and Serve: Garnish with parsley or green onions. Serve warm.
