Seasonings and Liquids

  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, with juices
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Greens and Seasoning

  • 2 cups chopped fresh spinach or kale
  • Salt and pepper to taste

Instructions

  1. Cook Sausage: In a large pot or Dutch oven, heat olive oil over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and fully cooked, about 6–8 minutes.
  2. Sauté Vegetables: Add diced onion, garlic, carrots, and celery to the pot. Cook for 4–5 minutes, until vegetables begin to soften and onions become translucent.
  3. Add Seasonings: Stir in Italian seasoning and red pepper flakes if using, mixing well to combine all flavors.
  4. Add Broth and Tomatoes: Pour in the chicken broth and diced tomatoes with their juices. Bring the mixture to a boil, then reduce heat and let simmer for 10–15 minutes to develop flavors.
  5. Incorporate Cream and Cheese: Stir in heavy cream and grated Parmesan cheese. Simmer for another 5 minutes until the soup is creamy and slightly thickened.
  6. Add Greens: Add the chopped spinach or kale and cook until wilted, about 2 minutes. Taste and adjust salt and pepper as needed.
  7. Serve: Serve the soup hot with extra Parmesan cheese on top if desired.
