Shrimp:

  • 1 pound large shrimp, peeled and deveined

Sauce:

  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons Jamaican jerk seasoning
  • juice of 1 lime
  • salt and black pepper to taste
  • fresh parsley or green onions for garnish (optional)

Instructions

  1. Cook pasta: Boil pasta until al dente, then drain and set aside.
  2. Sear shrimp: Season shrimp with jerk seasoning, cook in a skillet, then set aside.
  3. Make sauce: Cook garlic, bell peppers, and onion in the skillet. Add jerk seasoning, cream, broth, and Parmesan. Simmer until thickened.
  4. Combine: Add pasta and shrimp back to skillet, toss to coat. Adjust sauce consistency with reserved pasta water. Squeeze lime juice, garnish, and serve.
