  • 1 tbsp olive oil
  • Fresh thyme leaves
  • Salt and pepper to taste

Soup Base:

  • 6 cups beef or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp all-purpose flour
  • 2 tbsp butter
  • Salt and pepper to taste
  • Grated Gruyere cheese for serving

Instructions

  1. Caramelize the Onions: In a large pot, melt butter and olive oil over medium heat. Add onions, season with salt and pepper, and cook until caramelized, about 30-40 minutes.
  2. Sauté Mushrooms: In a separate pan, sauté mushrooms, garlic, and thyme in butter and olive oil until golden brown. Season with salt and pepper.
  3. Make the Soup Base: In the pot with caramelized onions, stir in flour and cook for a few minutes. Gradually whisk in broth and bring to a simmer. Add the mushroom mixture.
  4. Blend and Simmer: Use an immersion blender to blend the soup until smooth. Stir in heavy cream and simmer for another 10-15 minutes.
  5. Serve: Ladle the soup into bowls, top with grated Gruyere cheese, and enjoy!
