Description

For the Soup:

  • 1 lb boneless, skinless chicken breasts or thighs, cubed
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 medium potato, peeled and diced (optional)
  • 1 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground ginger
  • 1/2 tsp ground cumin
  • 4 cups chicken broth
  • 1 cup canned coconut milk
  • 1/2 cup frozen peas
  • Salt and pepper, to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until the onion is soft and translucent, about 5 minutes. Add the diced carrots, celery, and potato (if using) to the pot, and sauté for another 5 minutes.
  2. Stir in the curry powder, turmeric, ginger, and cumin, allowing the spices to bloom in the oil for 1-2 minutes.
  3. Add the chicken cubes to the pot and cook until the chicken is browned on all sides, about 5-7 minutes.
  4. Pour in the chicken broth and coconut milk, and bring the mixture to a boil.
  5. Reduce the heat and let the soup simmer for 20-25 minutes, until the vegetables are tender and the chicken is cooked through.
  6. Add the frozen peas to the soup and cook for an additional 5 minutes.
  7. Season the soup with salt and pepper to taste, and serve hot.
  8. Garnish with fresh cilantro if desired.

Notes

  • If you prefer a thicker soup, you can blend part of the soup and then stir it back into the pot.
  • You can add more or less curry powder depending on your preferred spice level.
  • This soup pairs well with warm naan bread or rice.
