- Add Coffee and Egg: Beat in the dissolved instant coffee granules, followed by the egg and vanilla extract. Mix until all ingredients are fully incorporated.
- Combine Wet and Dry Ingredients: Gradually add the dry flour mixture to the wet ingredients, mixing gently until just combined to avoid overworking the dough.
- Add Optional Chocolate Chips and Ground Coffee: If desired, fold in the chocolate chips and ground coffee to enhance texture and flavor.
- Shape and Bake the Cookies: Drop spoonfuls of dough onto the prepared baking sheet, spacing them approximately 2 inches apart to allow for spreading. Bake in the preheated oven for 10 to 12 minutes or until the edges are golden and the centers are set.
