Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it well to prevent sticking.
- Make the Streusel Topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Use a fork or pastry cutter to cut in the cold butter until the mixture forms coarse crumbs. Set this streusel aside while you prepare the batter.
- Prepare the Muffin Batter: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt. In a separate bowl, whisk the milk, vegetable oil, egg, and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and gently stir just until combined; avoid overmixing to keep the muffins tender.
- Fill Muffin Cups and Add Streusel: Divide the batter evenly among the muffin cups, filling each about two-thirds full. Generously sprinkle the streusel topping over each muffin batter portion to create that signature crumb topping.
