Description
These Classic Potato Pancakes are a beloved Eastern European dish, featuring crispy, golden-brown pancakes made from grated potatoes and onions. Perfect as a side dish or a snack, these potato pancakes are easy to make and incredibly flavorful.
Ingredients
Scale
Potato Pancakes:
- 4 large russet potatoes, peeled and grated
- 1 small onion, grated
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For Frying and Serving:
- vegetable oil for frying
- sour cream or applesauce for serving (optional)
Instructions
- Prepare the Potato Mixture: Place the grated potatoes and onion in a clean kitchen towel and squeeze out excess moisture. In a large bowl, combine the drained potatoes and onion with the eggs, flour, salt, and pepper. Mix until well combined.
- Fry the Potato Pancakes: Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat. Drop spoonfuls of the potato mixture into the hot oil, flattening each slightly with the back of the spoon. Fry for 3 to 4 minutes per side, or until golden brown and crispy.
- Serve: Transfer the cooked potato pancakes to a paper towel-lined plate to drain excess oil. Serve warm with sour cream or applesauce if desired.
Notes
- For extra crispiness, soak grated potatoes in cold water for 10 minutes before draining and proceeding.
- Avoid overcrowding the pan to maintain oil temperature.
