Ingredients
Scale
Cornflake Cookies:
- 4 cups cornflake cereal
Chocolate Peanut Butter Mixture:
- 1 cup semi-sweet chocolate chips
- 1/2 cup creamy peanut butter
- 1/2 cup light corn syrup
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- Prepare the Chocolate Peanut Butter Mixture: Line a large baking sheet with parchment paper. In a medium saucepan over medium heat, combine corn syrup and sugar, stirring until the sugar dissolves and the mixture begins to bubble. Remove from heat and stir in peanut butter and vanilla extract until smooth.
- Add Chocolate Chips: Immediately add the chocolate chips and stir until fully melted and incorporated.
- Combine with Cornflakes: Gently fold in the cornflakes until evenly coated, being careful not to crush them too much.
- Form Cookies: Using a spoon or cookie scoop, drop mounds of the mixture onto the prepared baking sheet. Let cool at room temperature until firm, about 30 minutes.
Notes
- For a sweeter twist, drizzle white chocolate over the cookies once cooled.
- You can also add a pinch of sea salt on top for balance.
