Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Add egg and vanilla: Beat in the egg and vanilla extract until well combined.
  4. Mix dry ingredients: Add the oat flour, baking soda, and salt, and stir until a soft dough forms.
  5. Include chocolate chips: Fold in the chocolate chips.
  6. Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheet and bake for 9–11 minutes, until golden around the edges and set in the center.
  7. Cool and enjoy: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
