For the crust:
- 1 1/2 cups chocolate cookie crumbs (such as Oreos, finely crushed)
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
For the filling:
- 1 (21-ounce) can cherry pie filling
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy whipping cream
For the topping:
- 1/2 cup dark or semisweet chocolate chips
- 1/4 cup heavy cream
- Fresh cherries or chocolate shavings for garnish (optional)
Instructions
- Preheat the oven to 350°F. In a medium bowl, combine chocolate cookie crumbs, granulated sugar, and melted butter. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 8 to 10 minutes, then let cool completely.
- In a large mixing bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. In a separate bowl, whip the heavy cream to stiff peaks, then fold it into the cream cheese mixture until fully incorporated. Spread half of the cherry pie filling over the cooled crust. Spoon the cream cheese mixture over the cherries and smooth the top. Add the remaining cherry pie filling on top and gently spread.
- To make the ganache topping, heat 1/4 cup heavy cream until just simmering. Pour over chocolate chips in a small bowl and let sit for 1 minute, then stir until smooth. Drizzle the ganache over the top of the pie. Chill for at least 4 hours or until set. Garnish with fresh cherries or chocolate shavings before serving if desired.
