For the crust:
- 1 1/2 cups chocolate cookie crumbs (such as Oreos, without filling)
- 1/4 cup unsalted butter, melted
For the cheesecake layer:
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 1 cup cherry pie filling
For the chocolate topping:
- 3/4 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
Instructions
- Preheat oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, combine chocolate cookie crumbs and melted butter. Press the mixture firmly into the bottom of the prepared pan to form an even crust. Bake for 8–10 minutes, then let cool slightly.
- In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and almond extract if using. Pour the cream cheese mixture over the crust and spread evenly. Drop spoonfuls of cherry pie filling over the top and gently swirl with a knife.
- Bake for 30–35 minutes, or until the center is set. Let cool to room temperature, then refrigerate for at least 4 hours or overnight.
- For the topping, heat heavy cream until just steaming, then pour over chocolate chips in a bowl. Let sit for 2 minutes, then stir until smooth. Pour over the chilled cheesecake bars and spread evenly. Chill again until set, about 30 minutes. Slice and serve.
Notes
- For a firmer texture, freeze the bars for 30 minutes before slicing.
- You can use homemade cherry compote in place of canned filling.
- These bars store well in the fridge for up to 5 days.
