Scale
Main Ingredients
- 1 lb ground chicken
- 1/2 cup zucchini, grated and squeezed dry
- 1/3 cup fresh corn kernels (or thawed frozen)
- 1/4 cup green onions, thinly sliced
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs
- 1 egg
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
For Cooking
- 1 tablespoon olive oil (for cooking)
Optional Toppings
- lettuce
- tomato
- avocado
- aioli
- your favorite burger sauce
Instructions
- Mix Ingredients: In a large bowl, combine the ground chicken, grated zucchini, corn kernels, green onions, minced garlic, breadcrumbs, egg, Dijon mustard, salt, black pepper, and paprika. Mix gently until just combined, being careful not to overwork the mixture to ensure tender patties.
- Form Patties: Shape the mixture into 4 equal-sized patties. Refrigerate them for 10–15 minutes to help the patties firm up and hold together better during cooking.
- Heat Oil: Heat 1 tablespoon of olive oil in a nonstick skillet or grill pan over medium heat, ensuring the pan is evenly coated to prevent sticking.
- Cook Patties: Place the patties in the hot pan and cook for 5–6 minutes per side. Flip carefully and continue cooking until they are golden brown on both sides and reach an internal temperature of 165°F (74°C) for safe consumption.
- Serve: Serve the cooked burgers on your choice of buns or lettuce wraps. Top with optional ingredients such as lettuce, tomato, avocado, aioli, or your favorite burger sauce for added flavor and texture.
Notes
- You can alternatively bake the patties at 400°F (200°C) for 18–20 minutes if you prefer a hands-off cooking method.
- These burgers freeze well; shape the uncooked patties and freeze them in a single layer before transferring to a sealed bag or container for future use.
