Chicken Stroganoff:

  • 1 lb boneless, skinless chicken breasts or thighs, sliced into strips

  • 8 oz mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 cup sour cream
  • 1/4 cup heavy cream (optional for extra richness)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped parsley for garnish
  • Cooked egg noodles or rice for serving

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken strips, season with salt and pepper, and cook for 5–6 minutes until browned and cooked through. Remove from the skillet and set aside.
  2. Sauté Onion and Mushrooms: In the same skillet, add the onion and mushrooms, cooking for 5–6 minutes until softened and lightly golden. Stir in the garlic and cook for another 30 seconds.
  3. Create the Sauce: Sprinkle the flour over the vegetables and stir well to coat. Gradually pour in the chicken broth while stirring, then add Worcestershire sauce and Dijon mustard. Bring to a simmer and cook for 2–3 minutes until the sauce thickens.
  4. Finish the Dish: Reduce heat to low and stir in the sour cream and heavy cream (if using). Return the chicken to the pan and cook for another 2 minutes until heated through.
  5. Serve: Serve over egg noodles or rice and garnish with chopped parsley.

Notes

  • For a lighter version, use Greek yogurt instead of sour cream.
  • This dish can also be made with leftover cooked chicken—just stir it in at the end to heat through.
