Instructions

  1. Season and dredge chicken: Season the chicken breasts evenly with salt and freshly ground black pepper. Lightly dredge each breast in all-purpose flour, shaking off any excess to ensure a thin, even coating that will help create a golden crust when cooked.
  2. Heat fat in skillet: Place a large skillet over medium-high heat and add olive oil along with butter. Allow the butter to melt completely and the mixture to become hot but not smoking, creating a flavorful base for cooking the chicken.
  3. Cook chicken breasts: Add the floured chicken breasts to the hot skillet and cook for 3 to 4 minutes on each side.
