Fried Chicken:

  • 2 large boneless skinless chicken breasts (sliced in half horizontally to make 4 cutlets)
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • Vegetable oil for frying
  • 1/2 cup buffalo wing sauce
  • 2 tablespoons melted butter

Blue Cheese Slaw:

  • 1 1/2 cups shredded green cabbage
  • 1/2 cup shredded carrots
  • 1/3 cup crumbled blue cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 4 brioche buns

Instructions

  1. Marinate the Chicken: Combine buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Marinate chicken for at least 1 hour.
  2. Dredge and Fry: Dredge marinated chicken in flour mixture and fry until golden and cooked through.
  3. Coat with Buffalo Sauce: Whisk together buffalo sauce and melted butter. Brush over fried chicken.
  4. Prepare Slaw: Combine cabbage, carrots, blue cheese, mayonnaise, vinegar, mustard, salt, and pepper in a bowl. Toss to coat.
  5. Assemble Sandwiches: Toast buns, then assemble with buffalo chicken and blue cheese slaw.
