For the Chicken:
- 2 boneless, skinless chicken breasts (halved lengthwise)
- 1/2 cup all-purpose flour
- 2 large eggs (beaten)
- 1 cup Italian-style breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 cup olive oil
For Assembly:
- 1 cup marinara sauce (warmed)
- 1 1/2 cups shredded mozzarella cheese
- 4 sub rolls or hoagie buns
- 2 tablespoons chopped fresh basil or parsley (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C).
- Prepare the chicken: Pound the chicken cutlets lightly to an even thickness. Set up a breading station with three shallow bowls: flour in the first, beaten eggs in the second, and a mixture of breadcrumbs, Parmesan, garlic powder, salt, and pepper in the third. Dredge each chicken piece in flour, dip in egg, then coat in the breadcrumb mixture.
- Cook the chicken: Heat olive oil in a large skillet over medium heat. Cook the chicken in batches for 3–4 minutes per side, until golden brown and cooked through. Transfer to a paper towel-lined plate.
- Assemble the subs: Slice the sub rolls and place a piece of cooked chicken inside each. Top with marinara sauce and shredded mozzarella.
- Bake: Place the assembled subs on a baking sheet and bake for 5–7 minutes, or until the cheese is melted and bubbly.
- Garnish and serve: Garnish with chopped basil or parsley if desired. Serve warm.
