Description

For the Chicken:

  • 2 boneless, skinless chicken breasts (halved lengthwise)

  • 2 large eggs (beaten)

  • 1/4 teaspoon black pepper

  • 4 sub rolls or hoagie buns

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the chicken: Pound the chicken cutlets lightly to an even thickness. Set up a breading station with three shallow bowls: flour in the first, beaten eggs in the second, and a mixture of breadcrumbs, Parmesan, garlic powder, salt, and pepper in the third. Dredge each chicken piece in flour, dip in egg, then coat in the breadcrumb mixture.
  3. Cook the chicken: Heat olive oil in a large skillet over medium heat. Cook the chicken in batches for 3–4 minutes per side, until golden brown and cooked through. Transfer to a paper towel-lined plate.
  4. Assemble the subs: Slice the sub rolls and place a piece of cooked chicken inside each. Top with marinara sauce and shredded mozzarella.
  5. Bake: Place the assembled subs on a baking sheet and bake for 5–7 minutes, or until the cheese is melted and bubbly.
  6. Garnish and serve: Garnish with chopped basil or parsley if desired. Serve warm.
