For the creamy tomato risoni:

- 1 cup risoni (orzo)
- 1 can (15 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 2 cups low-sodium chicken broth
- 1/2 cup heavy cream
- 1/2 teaspoon dried basil
- Salt and black pepper to taste
- 1/4 cup grated Parmesan cheese
- Chopped fresh parsley or basil for garnish (optional)
Instructions
- For the meatballs: In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper. Shape into small meatballs and sear in olive oil until browned. Set aside.
- For the creamy tomato risoni: Sauté onion, add garlic, then risoni. Stir in tomatoes, tomato paste, broth, basil, salt, and pepper. Simmer with meatballs until risoni is tender. Finish with cream and Parmesan. Serve hot, garnished with parsley or basil.
