Delight your taste buds with these tender Chicken Meatballs served with flavorful Risoni pasta coated in a rich, Creamy Tomato Sauce. This Italian-inspired dish is perfect for a cozy family dinner or entertaining guests.

Ingredients

Scale

For the meatballs:

  • 1 pound ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 garlic cloves, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil for searing

For the creamy tomato risoni:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup risoni (orzo)
  • 1 can (15 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon dried basil
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Chopped fresh parsley or basil for garnish (optional)

Instructions

  1. For the meatballs: In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper. Shape into small meatballs and sear in olive oil until browned. Set aside.
  2. For the creamy tomato risoni: Sauté onion, add garlic, then risoni. Stir in tomatoes, tomato paste, broth, basil, salt, and pepper. Simmer with meatballs until risoni is tender. Finish with cream and Parmesan. Serve hot, garnished with parsley or basil.

Notes

  • You can substitute ground turkey for chicken or use store-bought meatballs for a quicker version.
  • For added vegetables, stir in baby spinach or zucchini during the last few minutes of cooking.
  • Leftovers reheat well with a splash of broth or cream.
