For the Chicken:

  • 2 boneless skinless chicken breasts, diced

For the Sauce:

  • 4 slices bacon, chopped
  • 3 garlic cloves, minced
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/2 teaspoon black pepper

For Garnish:

  • Chopped fresh parsley

Instructions

  1. Cook the Pasta: In a large pot of salted boiling water, cook the pasta until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Cook the Chicken: Heat olive oil in a skillet, season chicken with salt and pepper, and cook until golden and cooked through. Remove from skillet and set aside.
  3. Prepare the Sauce: In the same skillet, cook bacon until crispy. Add minced garlic and sauté. In a bowl, whisk together eggs, Parmesan, cream, and black pepper.
  4. Combine: Reduce heat, return pasta to skillet, pour in egg mixture, toss to coat. Add reserved pasta water if needed. Stir in cooked chicken until heated through.
  5. Serve: Garnish with parsley and extra Parmesan. Enjoy!
