Cheesecake Filling:
- 8 oz cream cheese (softened)
- ¼ cup granulated sugar
- ½ teaspoon vanilla extract
Additional Ingredients:
- 1 cup cherry pie filling
- 10 egg roll wrappers
- vegetable oil for frying
- powdered sugar for dusting (optional)
Instructions
- Cheesecake Filling: In a medium bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
- Assembly: Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Spread about 1 tablespoon of the cream cheese mixture across the center and top with 1 tablespoon of cherry pie filling. Fold the bottom corner up over the filling, then fold in the sides, and roll tightly. Seal the tip with a little water. Repeat with the remaining wrappers and filling.
- Frying: Heat about 1½ inches of vegetable oil in a deep skillet or saucepan to 350°F (175°C). Fry egg rolls in batches for 2–3 minutes per side, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Dust with powdered sugar if desired. Serve warm.
Notes
- Use store-bought cherry pie filling or homemade.
- These can be air-fried at 375°F for 8–10 minutes, flipping halfway through.
- Great served with whipped cream or vanilla ice cream.
