Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a 12-cup muffin tin.
- Prepare cookie dough: In a small bowl, whisk together flour, baking soda, and salt. In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy. Add egg and vanilla extract, mix until combined. Gradually add dry ingredients, then stir in chocolate chips.
- Form cookie cups: Scoop about 1 1/2 tablespoons of dough into each muffin cup, pressing it into the bottom and slightly up the sides to create a well.
- Make cheesecake filling: In another bowl, beat cream cheese, granulated sugar, egg, and vanilla extract until smooth. Spoon about 1 tablespoon of cheesecake filling into the center of each cookie cup.
- Bake: Bake for 14–16 minutes until cookie edges are golden and cheesecake is set. Cool completely before removing from the pan.
