Gruyère Toasts:

  • 1 baguette, sliced into 1/2-inch rounds
  • 1 cup shredded Gruyère cheese
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Soup: In a large soup pot, heat olive oil and butter over medium heat. Add the leeks and onion and sauté for 5 to 6 minutes until softened but not browned. Stir in the garlic, celeriac, and potato, and cook for another 5 minutes. Add the thyme and broth, bring to a boil, then reduce heat and simmer for 25 to 30 minutes until vegetables are tender. Remove from heat and blend the soup until smooth. Stir in milk or cream if using, then season with salt and pepper to taste. Reheat gently if needed.
  2. Gruyère Toasts: Preheat the broiler. Arrange baguette slices on a baking sheet and top with shredded Gruyère and thyme. Broil for 2 to 3 minutes until bubbly and golden.
