- 1 large head cauliflower, cut into florets
- 2 tablespoons unsalted butter
- ¼ cup sour cream
- 2 garlic cloves, minced
- ¼ cup grated Parmesan cheese
- Salt and black pepper to taste
Garnish
- Chopped chives or parsley (optional)
Instructions
- Boil Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 10 to 12 minutes until very tender, then drain well and pat dry with paper towels to remove excess moisture.
- Blend Ingredients: In a food processor or with an immersion blender, combine the cooked cauliflower, butter, sour cream, minced garlic, grated Parmesan cheese, salt, and black pepper. Blend until the mixture is smooth and creamy.
- Adjust Seasoning: Taste the mash and adjust salt and pepper as needed to suit your preference.
- Serve: Transfer the cauliflower mash to a serving bowl and garnish with chopped chives or parsley if desired. Serve warm as a delicious side dish.
Notes
- For a dairy-free version, substitute butter and sour cream with olive oil and unsweetened non-dairy yogurt.
- If the mash is too thin, stir in a tablespoon of cream cheese or some mashed potatoes to thicken.
