Instructions

  1. Prepare the oven and baking dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Cook the meat and vegetables: In a large skillet over medium heat, warm the olive oil. Add the ground beef, diced onion, and green bell pepper. Cook, stirring occasionally, until the beef is browned and the vegetables have softened, about 6 to 7 minutes.
  3. Add seasoning and liquids: Stir in the minced garlic, Rotel tomatoes with green chilies, cream of mushroom soup, sour cream, diced green chilies, taco seasoning, salt, and pepper. Allow the mixture to simmer gently for 5 minutes until it thickens slightly and the flavors meld.
  4. Prepare the crust: Unroll the crescent roll dough and press it evenly into the bottom of the prepared baking dish forming a uniform crust layer.
  5. Layer the casserole: Sprinkle 1 cup of shredded cheddar cheese evenly over the crescent roll crust. Pour the beef and vegetable mixture on top and spread it out evenly. Then, sprinkle the remaining 1 cup of cheddar and the 1 cup of mozzarella cheese over the beef layer.
