Instructions
- Preheat the Oven: Preheat the oven to 350°F.
- Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- Prepare Batter: In a large bowl, beat eggs, granulated sugar, brown sugar, oil, and vanilla until smooth. Gradually add the dry ingredients and mix until just combined. Fold in carrots, pineapple, nuts, and coconut if using.
- Bake: Spread the batter into a greased 9×13-inch baking pan. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
- Make Frosting: Beat cream cheese and butter until creamy. Gradually add powdered sugar and vanilla, beating until smooth.
