Seasonings and Broth:

  • 2 tablespoons all-purpose flour
  • 1 tablespoon tomato paste
  • 2 cups beef broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Serving:

  • Warm flour tortillas (for serving)

Instructions

  1. Brown the Beef: Heat vegetable oil in a large pot, sear beef cubes until browned, then set aside.
  2. Saute Vegetables: In the same pot, cook onion, bell pepper until softened. Add garlic, flour, tomato paste, and cook.
  3. Add Seasonings and Broth: Stir in beef broth, cumin, chili powder, paprika, oregano, salt, and pepper. Return beef to the pot and simmer.
  4. Cook Slowly: Cover and cook on low heat for 2 to 2.5 hours until beef is tender and gravy thickens.
