Instructions
- Preheat the Oven: Preheat oven to 350°F and line a baking sheet with parchment paper.
- Cream Butter and Cream Cheese: In a large bowl, cream together softened butter and cream cheese until smooth.
- Add Sugar and Eggs: Beat in granulated sugar until light and fluffy. Mix in the egg and vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Prepare Dough: Fold in caramel bits. Roll dough into balls and place on baking sheet. Optionally, sprinkle with graham cracker crumbs.
- Bake: Bake for 10–12 minutes until edges are set and centers are still soft. Cool on sheet before transferring to a wire rack.

- For extra gooey cookies, press additional caramel bits onto dough balls before baking.
