- 1 can (13.5 ounces) full-fat coconut milk
- 1 cup whole milk
- 1/2 cup unsweetened shredded coconut
- 3 large eggs
- 1 tablespoon cornstarch
- 1/2 teaspoon vanilla extract
- pinch of salt
- toasted coconut flakes for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F.
- Blend the ingredients: In a blender, combine the sweetened condensed milk, coconut milk, whole milk, shredded coconut, eggs, cornstarch, vanilla extract, and salt. Blend until smooth.
- Pour and bake: Pour the mixture into a greased 8-inch round baking dish or individual ramekins. Place the dish in a larger roasting pan with hot water for a water bath. Bake for 45–50 minutes until set and golden on top.
- Cool and chill: Remove from the oven, cool to room temperature, then refrigerate for at least 2 hours before serving. Garnish with toasted coconut flakes if desired.
