Ingredients

Scale

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour (or more all-purpose)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Wet Ingredients:

  • 2 cups grated zucchini (about 2 medium)
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing it and lining with parchment paper.
  2. Prepare Zucchini: Squeeze out excess moisture from grated zucchini using a kitchen towel.
  3. Mix Dry Ingredients: In a bowl, whisk together all-purpose flour, whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Combine Wet Ingredients: In a separate bowl, whisk eggs, vegetable oil, brown sugar, granulated sugar, and vanilla until smooth. Stir in grated zucchini.
  5. Combine Ingredients: Add dry ingredients to the wet mixture, stirring until just combined. Fold in nuts if desired.
  6. Bake: Pour the batter into the prepared pan, smooth the top, and bake for 50–60 minutes until a toothpick comes out clean.
  7. Cool and Serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
