Ingredients
Scale
For the Kabobs:
- 1 ½ pounds boneless skinless chicken breasts, cut into 1-inch cubes
- 2 cups fresh pineapple chunks
- 1 large red bell pepper, cut into 1-inch pieces
- 1 large green bell pepper, cut into 1-inch pieces
- 1 small red onion, cut into wedges
- Wooden or metal skewers
For the Marinade:
- ¾ cup barbecue sauce (plus extra for brushing)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Marinate the Chicken: In a large bowl, combine the cubed chicken with olive oil, garlic powder, smoked paprika, salt, and black pepper. Marinate for at least 30 minutes.
- Prepare the Skewers: If using wooden skewers, soak them in water for 20–30 minutes to prevent burning. Preheat grill to medium-high heat.
- Thread the Ingredients: Thread the marinated chicken, pineapple chunks, bell peppers, and red onion onto skewers, alternating items.
- Grill the Kabobs: Brush the assembled kabobs with barbecue sauce. Grill for 10–12 minutes, turning occasionally and brushing with more barbecue sauce until chicken is cooked through.
- Serve: Remove from grill, let rest, and serve hot.
Notes
- For enhanced flavor, marinate the chicken overnight.
- You can use store-bought or homemade barbecue sauce.
- Pair with rice, grilled corn, or a fresh summer salad.
