Sweet Potatoes:
- 2 large sweet potatoes (peeled and cubed)

BBQ Chicken:
- 2 cups cooked shredded chicken
- 1/2 cup barbecue sauce
Additional Ingredients:
- 1 cup canned black beans (rinsed and drained)
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 avocado (sliced)
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- Preheat the oven: Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper.
- Prepare the BBQ Chicken: Warm the shredded chicken in a skillet over medium heat. Add the barbecue sauce and stir to coat. Cook for 3–5 minutes until heated through.
- Assemble the Bowls: Divide the roasted sweet potatoes, BBQ chicken, black beans, corn, avocado, and red onion evenly among 4 bowls. Top with chopped cilantro and serve with lime wedges.
Toss the sweet potato cubes with olive oil, salt, and pepper. Spread in a single layer and roast for 25–30 minutes, flipping halfway through, until tender and golden.

- To make it vegetarian, swap the chicken for roasted chickpeas or tofu.
