Sweet Potatoes:

  • 2 large sweet potatoes (peeled and cubed)

BBQ Chicken:

  • 2 cups cooked shredded chicken
  • 1/2 cup barbecue sauce

Additional Ingredients:

  • 1 cup canned black beans (rinsed and drained)
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 avocado (sliced)
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. Toss the sweet potato cubes with olive oil, salt, and pepper. Spread in a single layer and roast for 25–30 minutes, flipping halfway through, until tender and golden.

  3. Prepare the BBQ Chicken: Warm the shredded chicken in a skillet over medium heat. Add the barbecue sauce and stir to coat. Cook for 3–5 minutes until heated through.
  4. Assemble the Bowls: Divide the roasted sweet potatoes, BBQ chicken, black beans, corn, avocado, and red onion evenly among 4 bowls. Top with chopped cilantro and serve with lime wedges.
