Instructions
- Prepare the Fish: Pat the fish fillets dry and cut them into desired portions. Lightly dredge each piece in flour and set aside.
- Make the Batter: In a medium bowl, whisk together 1 cup flour, cornstarch, baking powder, salt, pepper, and paprika. Gradually whisk in the cold sparkling water until a smooth, thick batter forms.
- Fry the Fish: Heat vegetable oil in a deep skillet to 350°F. Dip each piece of fish into the batter, allowing excess to drip off, then carefully place it into the hot oil. Fry 2–3 pieces at a time for 4–5 minutes, turning occasionally, until golden brown and cooked through. Drain on paper towels.
