  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, mashed
  • 1/2 cup sour cream
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup caramel sauce, plus more for topping

For Garnish:

  • Whipped cream
  • Sliced bananas
  • Extra chopped nuts

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (160°C).
  2. Prepare the crust: Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into a 9-inch springform pan and bake for 10 minutes.
  3. Make the filling: Beat cream cheese and sugar, add eggs one at a time, then mix in vanilla, bananas, sour cream, flour, and cinnamon. Fold in nuts.
  4. Bake: Pour filling over crust, place in a water bath, and bake for 60-70 minutes. Let cool in the oven.
  5. Chill: Refrigerate for at least 4 hours.
  6. Serve: Drizzle with caramel, garnish with whipped cream, bananas, and nuts.

Notes

  • For a stronger banana flavor, use very ripe bananas with brown spots.
  • To prevent cracks, always use a water bath and allow the cheesecake to cool gradually.
