- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar

Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Cream butter and sugar: In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add eggs and bananas: Beat in the eggs one at a time, then stir in the vanilla and mashed bananas.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture and mix until just combined.
- Add optional ingredients: Fold in walnuts or chocolate chips if using.
- Bake: Pour the batter into the prepared loaf pan and spread evenly. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and serve: Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For extra banana flavor, use very ripe bananas with lots of brown spots.
- This bread also freezes well—just wrap tightly in plastic and foil.
