For the Casserole:
- 2 cups cooked chicken breast (shredded or cubed)
- 2 medium russet potatoes (baked and chopped)
- 2 cups broccoli florets (steamed or lightly cooked)
- 1 cup sour cream
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons butter (melted)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Optional Toppings:
- 1/4 cup chopped green onions or chives
- 1/4 cup crumbled cooked bacon
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Prepare the Casserole: In a large bowl, combine sour cream, milk, melted butter, garlic powder, onion powder, salt, and pepper. Stir in the chopped baked potatoes, cooked chicken, broccoli, and half of the cheddar and mozzarella cheese. Mix until well combined.
- Bake: Transfer the mixture to the prepared baking dish and spread evenly. Sprinkle the remaining cheese on top. Bake for 25–30 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
- Serve: Remove from oven and top with chopped green onions or chives and crumbled bacon if desired. Serve warm.
Notes
- You can use rotisserie chicken for convenience and frozen broccoli (thawed and drained) in place of fresh.
- Add a little hot sauce to the mixture for a subtle kick.
