- 1 1/2 cups uncooked orzo pasta
- 1 (14.5 oz) can diced tomatoes (with juices)
- 2 cups vegetable or chicken broth
- 1/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese

- 1/4 cup chopped fresh parsley or basil
Instructions
- Preheat the Oven: Preheat the oven to 375°F (190°C).
- Sauté Vegetables: In an oven-safe skillet, sauté onion, garlic, bell pepper, and zucchini until softened.
