Asparagus Salad:

  • 1 bunch asparagus, trimmed and cut into 2-inch pieces

Additional Ingredients:

  • 1 cup thinly sliced radishes
  • 2 cups mixed salad greens
  • 1/4 cup crumbled feta cheese
  • 2 tbsp chopped fresh herbs (such as parsley or dill)
  • 3 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp honey

Instructions

  1. Blanch Asparagus: Bring a pot of salted water to a boil. Add asparagus and blanch for 2–3 minutes until tender-crisp, then transfer to an ice bath to cool. Drain well.
  2. Prepare Salad: In a large bowl, combine blanched asparagus, radishes, salad greens, feta, and fresh herbs.
  3. Make Dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper.
  4. Toss and Serve: Drizzle the dressing over the salad and toss gently to coat. Serve immediately.
