For the Chicken:
- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon tomato paste
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cloves garlic (minced)
For the Sautéed Garlic Spinach:
- 1 tablespoon olive oil
- 3 cloves garlic (thinly sliced)
- 8 cups fresh baby spinach
- pinch of salt and pepper
- squeeze of lemon juice (optional)
Instructions
- Marinate the Chicken: In a bowl, combine olive oil, apple cider vinegar, soy sauce, brown sugar, tomato paste, paprika, cumin, oregano, salt, pepper, and garlic. Coat chicken evenly and marinate for at least 30 minutes.
- Cook the Chicken: Sear marinated chicken in a hot skillet for 5–6 minutes per side until fully cooked. Rest for 5 minutes.
- Prepare the Spinach: Sauté garlic in olive oil until fragrant. Add spinach and cook until wilted. Season with salt, pepper, and lemon juice.
- Serve the chicken with garlic spinach on the side.
