Bread:
- 8 slices sourdough or Italian bread

- 1/2 cup oil-packed sun-dried tomatoes, drained and chopped
- 1 cup fresh spinach leaves (lightly wilted or sautéed)
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste

Instructions
- Prepare the Ricotta Filling: In a medium bowl, mix together the ricotta, mozzarella, Parmesan, sun-dried tomatoes, spinach, garlic powder, salt, and pepper until well combined.
- Assemble the Sandwiches: Spread the ricotta filling onto 4 slices of bread. Top with the remaining bread slices to form sandwiches. Lightly butter the outsides of each sandwich.
