  2. Form Patties and Chill: Shape the mixture into rectangular or oval patties about 1 inch thick. Arrange the patties on a baking sheet or tray, cover, and refrigerate for at least 30 minutes to help them firm up for cooking.
  3. Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking the patties with gravy later.
  4. Sear Patties: Heat a large skillet over medium heat. Brown the patties for 2-3 minutes on each side, just enough to develop a crust and seal in the juices. Transfer browned patties into a 9×13-inch baking dish.
