Zucchini:

Breading:

- 2 large eggs, beaten
- 1 cup panko breadcrumbs

- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Instructions
- Preheat Air Fryer: Preheat air fryer to 400°F (200°C) for 3 minutes.
- Breading Station: Set up a breading station with flour, beaten eggs, and a mixture of panko breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper.
- Dredge and Coat: Dredge each zucchini slice in flour, dip in egg, then coat with breadcrumb mixture, pressing gently to adhere.
- Cook: Place zucchini slices in a single layer in the air fryer basket, spraying lightly with cooking spray. Cook for 8–10 minutes, flipping halfway through, until golden brown and crisp.
- Serve: Serve warm with marinara sauce for dipping.
