Description

  • 8 ounces button mushrooms (about 10-12)

Filling

  • ¼ cup cream cheese
  • ¼ cup parmesan cheese, shredded (plus extra for topping)
  • ¼ cup Italian breadcrumbs
  • 1 clove garlic, minced
  • Kosher salt, a pinch or two
  • Freshly ground black pepper, to taste

Optional Topping

  • Italian seasoning, to sprinkle on top


Instructions

  1. Prepare mushrooms: Wash the button mushrooms thoroughly and carefully remove the stems. Set the mushroom caps aside and keep the stems for the filling.
  2. Make filling: Place the mushroom stems into a food processor. Add the cream cheese, shredded parmesan cheese, Italian breadcrumbs, minced garlic, kosher salt, and freshly ground black pepper. Process until all ingredients are fully combined into a smooth mixture.
  3. Fill mushrooms: Spoon the filling mixture into each mushroom cap, filling them generously. Sprinkle a small amount of shredded parmesan cheese and Italian seasoning on top of each stuffed mushroom for extra flavor.
  4. Air fry: Arrange the stuffed mushrooms in a single layer inside the air fryer basket, making sure there is enough space between them for air circulation. Set the air fryer to 400°F (204°C) and cook for 8 to 10 minutes or until the mushrooms are tender and the tops are golden brown.
  5. Serve: Carefully remove the mushrooms from the air fryer using tongs. Allow them to cool slightly before serving. These stuffed mushrooms are best enjoyed immediately while warm.

Notes

  • You can substitute Italian breadcrumbs with gluten-free breadcrumbs to make this recipe gluten-free.
  • If you don’t have a food processor, finely chop the mushroom stems and garlic by hand and mix well with the other filling ingredients.
  • For a richer flavor, add a small amount of finely chopped fresh herbs like parsley or basil to the filling.
  • Make sure to not overcrowd the air fryer basket for even cooking and crispiness.
  • Leftover filling can be refrigerated for up to 2 days but is best used fresh.
