For the Chicken:
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
For the Vegetables:
- 2 cups zucchini, cut into half-moons
- 1 cup mushrooms, sliced
- 1 cup carrots, sliced
- 1 cup onion, chopped
For Serving:
- 2 cups cooked rice
- 2 tablespoons yum yum sauce or hibachi sauce (optional)
- 1 tablespoon sesame seeds
- 2 green onions, sliced for garnish
Instructions
- Marinate the Chicken: In a large bowl, combine chicken with soy sauce, sesame oil, olive oil, garlic, and ginger. Marinate for at least 15 minutes.
- Cook the Chicken: Preheat the air fryer to 375°F. Cook the chicken in a single layer for 12–14 minutes, shaking halfway through.
- Cook the Vegetables: Add zucchini, mushrooms, carrots, and onion to the air fryer. Cook for 10–12 minutes until tender.
- Combine and Serve: Combine chicken and vegetables, sprinkle with sesame seeds and green onions. Serve over rice with sauce.
Notes
- For extra flavor, drizzle teriyaki sauce over the chicken.
- This recipe can also be made with shrimp or steak.
