For the Chicken:

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated

For the Vegetables:

  • 2 cups zucchini, cut into half-moons
  • 1 cup mushrooms, sliced
  • 1 cup carrots, sliced
  • 1 cup onion, chopped

For Serving:

  • 2 cups cooked rice
  • 2 tablespoons yum yum sauce or hibachi sauce (optional)
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced for garnish

Instructions

  1. Marinate the Chicken: In a large bowl, combine chicken with soy sauce, sesame oil, olive oil, garlic, and ginger. Marinate for at least 15 minutes.
  2. Cook the Chicken: Preheat the air fryer to 375°F. Cook the chicken in a single layer for 12–14 minutes, shaking halfway through.
  3. Cook the Vegetables: Add zucchini, mushrooms, carrots, and onion to the air fryer. Cook for 10–12 minutes until tender.
  4. Combine and Serve: Combine chicken and vegetables, sprinkle with sesame seeds and green onions. Serve over rice with sauce.

Notes

  • For extra flavor, drizzle teriyaki sauce over the chicken.
  • This recipe can also be made with shrimp or steak.
